I have some confidential/private information in some of my files, so if i have a company do Data Recovery on my laptop that recently crashed are they going to be able to see all of my files?

odds are not all of your files
it is like crashing your car and a mechanic hauls it into his shop and walking into a grocery store and asking people if your car will be okay

you gave us no details on what happened to your laptop other than it crashed
