can it be tracked what my profile has done on each computer on the internet?
You have to log in to access computer.
Can they read my emails and different sites i’ve been on if they don’t know what computers Ive been on?
Or is that info saved to that computer?

It’s possible, but extremely unlikely. They would have to check the logs to see when you logged on, check the network traffic to see what web sites you viewed, and even then they couldn’t read your emails- just see where you went. And that’s assuming they record all that stuff. They probably don’t keep very specific network logs because it would take too much memory.
IT folks can see and access everything on ALL computers in the network.
They are usually too busy to watch everybody all the time.
They can read the logs on each computer.
We had a tech send an alert asking “where are the brownies?”.
Yes they can, and since they are acting as an ISP, they are required to track and maintain a log of your activity. If you are connected to an non-ssl type mail server or not using a vpn, they could read the data in the packets you send and receive, but that is unlikely unless you have a stalker in the IT group.
